Our cuisine evolved along with the deeper exchange between countries as a result of conquers and occupations of centuries ago, and today the globalization. Behind any dish that everyone recognize as traditional there is a history of conquerors and conquered, ingredients that have crossed oceans and mountains. What is today a national meal, was yesterday the main nourishment of an Asian tribe or the obsession of pre-Colombian Indians.
The same happens with the traditional cuisine of 1800, that had typical dishes like “puchero” and “escabeche”. Immigrants came especially from Spain and Italy, but also from Poland, France, Ireland and Germany. Jorge Luis Borges said Argentineans come from ships and the same thing happens with the roots of our cuisine. Immigrants arrived here with their language and cooking customs, which they later adapted to local possibilities.
The recipes that came centuries ago took root and mixed together so long ago that today we recognize them as ours.
